Liebich Leveret Shiraz 2015

What is a Leveret you may ask?

It is the French term for a baby hare, which narrowly escapes being run over by the tractor from row to row. Ron chose the name back in 1999 after seeing our Cairn Terrier chase many a hare amongst the vines.

We are proud to present the 2015 Leveret Shiraz. Lovers of rich and juicy Barossa Shiraz won’t be disappointed.

This single vineyard Barossa Shiraz was grown on 25 year old vines in the eastern foothills of Rowland Flat, where heavier red brown black soils predominate. The 2015 vintage was excellent yielding perfectly ripened fruit which produced a full-flavour, well-balanced and elegant style red.

Traditional techniques of hand plunging, basket-pressing and bottling without fining or filtration, all help to preserve the essence of fruit. Maturation for 24 months in seasoned American and French oak has delivered a complex wine with fruit-forward flavours, subtle oak influence and well-integrated tannins.

Enjoy now and for at least 10 years, particularly with red meats and richly flavoured foods. This wine was bottled in screw cap to immortalise the magnificent flavours beyond the life span of cork.

Taste Notes: Black inky colour. Bouquet of ripe dark berries, cherries, chocolate and vanilla spice. Medium-full bodied with good acid structure, fine tannins, excellent fruit length, and a smooth silky finish.

Recipe: Caramelised Onion, Fig, Rosemary and Wine Sauce

Caramelised Onion, Fig, Rosemary and Wine Sauce

This quick and versatile sauce is more like a savoury compote. Excellent condiment for using figs, especially when you have had enough of sweet fig-based desserts. Serve as a sauce with roast lamb, baked fish, on pizza bases or like a relish. It’s just as good made with a full bodied red wine or Port style wine.

Prep 10 mins ∙ Cook 25 mins 

INGREDIENTS

2 tbsp olive oil

500g brown onions, sliced thinly

1 cup fresh figs or ½ cup dried figs

¼ cup wine (Liebichwein red wine or Tawny Port)

1 cup stock (chicken or vegetable)

1 tbsp Liebichwein Muscat Vinegar (balsamic vinegar can be substituted)

1 tbsp chopped rosemary or thyme (fresh or dried)

Salt & Pepper to taste

DIRECTIONS

Prepare sliced onions and cut figs into quarters if using fresh figs.

Heat olive oil in large frying pan. Add onions and sprinkle some salt. Cook over medium heat, stirring occasionally, until onions are golden, about 20 minutes.

Stir in figs, wine, stock, vinegar and herbs. Increase heat to high and simmer until sauce thickens, about 5 minutes.

Add salt and pepper taste.

Store in a sealed container in the fridge for 2-3 weeks. Alternatively, freeze in small portions until ready to use.

The Darkie Shiraz 2009 – Museum Release

Special museum release of a classic full-bodied 100% Barossa Shiraz from low yielding old vines.

Liebichwein’s flagship red wine dedicated to Ron’s uncle Clarence Walter “Darkie” Liebich (1920-1988) who encouraged Ron’s winemaking abilities. Uncle “Darkie” planted the 40 acre block on heavy biscay soil on the eastern foothills of the Barossa Ranges in 1969. The vines receive minimal attention and allow nature to do the work. Dead arm affliction reduces yield but enhances flavour as does the use of hand-pruning and minimal irrigation.

Vintage 2009 was a very good season with low yield of 1.5 tonne/acre. Traditional techniques of hand plunging and basket-pressing with no fining or filtration all enhance flavour and regional fruit characteristics. A unique wine having ages at least five years in various aged American and French hogsheads, producing a multi-layered wine.

Taste Notes: A rich aroma of black cherries and chocolate mingled with sweet spiced vanilla. Amazingly complex concentrated flavours linger long after the first sip. All this is perfectly balanced with the subtle oak maturation and super silky tannins. Exceptional drinking now, but even better with bottle maturation 10 years and beyond.

The Lofty Old Vine Cabernet Sauvignon

Single vineyard wine sourced from the old 40 acre block, planted by Clarence Walter “Darkie” Liebich in 1969. Dead arm affliction reduces yield but enhances flavour as does the use of hand-pruning and minimal irrigation.  The vines grow on heavy black biscay soil at Rowland Flat on the eastern foothills of the Barossa.

This wine of great quality and character is dedicated to Ron’s father, “Lofty” (Lesley Alwyn) Liebich (1916-1953) who was a man with high ideals. Produced in special vintages since 1992 when the cellar door was established.

Special museum stock 2006 vintage is currently available – a very good growing season resulting in an extremely low yield of 1 tonne per acre. Traditional techniques of hand plunging, basket-pressing with no fining or filtration were employed for fuller flavour.

A rich and enticing wine exhibiting violet and spiced blackberry fruit nuances perfectly balanced with the subtle oak after maturation for over five years in various aged French oak barrels. Super concentrated flavours and ultra silky tannins. Exceptional drinking now, but will reward patience with bottle maturation for another 10 years at least.

A wholly tempting blend of classic Bordeaux and Spanish varietals all grown on the Liebich property in the southern part of the Barossa Valley. The name “Tempt” derives from the letters of the three varietals.

The Petit Verdot and Tempranillo vines, planted in 2000, are some of the oldest growing in the Barossa Valley region. Our climate in South Australia is not dissimilar to the climate and terrain of several regions in Spain, so Tempranillo is well suited to our site.

Petit Verdot provides attractive berry fruits, Merlot rounds out the smooth body and a splash of Tempranillo adds depth and lengthens the palate.  This unique blend was hand plunged and basket-pressed, then spent 18 months undisturbed in seasoned French oak, before being bottled without filtration to encapsulate the fruit flavours.

This wine can be enjoyed now and for at least 10 years. Perfect with tapas and paella.This wine was bottled in screw cap to immortalise the magnificent flavours beyond the life span of cork.

Taste Notes:  Deep burgundy colour. Intense bouquet of raspberries, mulberries, floral and sweet spice which follow through to the palate. Medium-full bodied with fine tannins, excellent fruit length, and a soft finish.

Blend:  40% Petit Verdot  40% Merlot   20% Tempranillo
